I have never been to Ethiopia, but I have been fortunate enough to learn the cuisine from Ethiopians. I have always loved their food. I once renovated a restaurant that was operated by people I knew.  The owners introduced me to many dishes and taught me the cooking methods. The flavors are unique and blend so well together one gets the sensation that this ancient cuisine evolved in its own realm. The flatbread is served at every meal and is a staple. Hot spices and compounds are used in most recipes. There are many vegetarian dishes as well as slow-cooked and simmered meats. Sour cream is served on the side as a cooler. The salads are a more modern touch.
