The cuisine of Morocco is unique in its blend of spices and flavors. Preserved lemon, cinnamon, clove, herbs, raisins and dates are typical ingredients.

Morocco is a coastal nation with an elaborate fish and seafood tradition, but, I chose to make dishes that depict a cuisine of the interior. Arabic and African influences blend alongside the original Berber. Simmering meats in sauce over low heat tenderizes and flavors wonderfully. Salads are fresh and contrasting with sweet and sour coming together to be teased by hot sauces. 0f course,

a meal is not complete without the accompanying couscous covered with your favorite dish or sauce.
